East-West Quick Skillet Dinner

(MAKES 4 SERVINGS)

IN THIS RECIPE

WHAT YOU NEED:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 tbs vegetable oil
  • 4 oz thin spaghetti, broken into 2-inch pieces
  • 2 cloves garlic, minced
  • 1 to 2 cups coarsely chopped fresh vegetables
  • 1 pkg Sun-Bird Stir-Fry Seasoning
  • 1 cup beef broth
  • 1 cup water
  • Salt and Pepper, to taste

PREPARATIONS:

  • Cook ground beef and onions in large skillet over medium-high heat until beef is browned stirring to crumble; drain and set aside.
  • Pour oil into skillet. Add spaghetti to oil and cook over medium-high heat, stirring frequently, until spaghetti is golden. Stir in cooked beef-onion mixture and remaining ingredients. Cover and cook over low heat 25 minutes or until pasta is tender.

Note: Some suggestions of coarse chopped vegetables:  carrots, broccoli, celery, zucchini, canned water chestnuts, bamboo shoots or whole snow peas.  Or for a simpler option, substitute 1 to 2 cups frozen stir-fry vegetable mix for fresh vegetables.
