WHAT YOU NEED:

PREPARATIONS:

  • Peel and dice the butternut squash. Smaller pieces will reduce your cook time.
  • Sauté  squash in butter until it browns slightly.
  • In a separate container, combine the remaining ingredients.
  • Add this mixture to your pan and continue to cook on medium heat.
  • Cook for 15 minutes or until butternut squash is tender and little liquid remains.
  • If there is excess liquid, simmer on high heat to reduce.
