Cold Lo Mein Noodle, Cucumber and Mint Salad

IN THIS RECIPE

WHAT YOU NEED:

  • 1 (10 oz) pkg Lo mein noodles
  • 1 pkg Sun-Bird® Lo Mein Seasoning Mix 
  • 1/2 cup Orange juice
  • 1 tbsp Low-sodium soy sauce
  • 2 tbsp Rice wine vinegar
  • 2 radishes, thinly sliced
  • 2 Persian cucumbers, thinly sliced
  • 1 medium Carrot, cut into 1/8-inch matchsticks
  • 1/4 cup Packed mint leaves
  • 1/4 cup Roasted peanuts, chopped
  • 2 tsp Black sesame seeds, optional

PREPARATIONS:

  • Cook the lo mein noodles according to package directions. Rinse with cold water, drain and set aside.
  • Combine the Sun-Bird® Lo Mein Seasoning Mix, orange juice and soy sauce in a small saucepan. Cook, stirring occasionally, until sauce thickens, about 3-5 minutes. Allow to cool completely at room temperature.
  • Toss the cooked noodles, low mein sauce, vinegar, radishes, cucumbers and carrots together until coated. Garnish with the mint, peanuts and sesame seeds. Serve and enjoy.
