Cold Lo Mein Noodle, Cucumber and Mint Salad

IN THIS RECIPE
WHAT YOU NEED:
- 1 (10 oz) pkg Lo mein noodles
- 1 pkg Sun-Bird® Lo Mein Seasoning Mix
- 1/2 cup Orange juice
- 1 tbsp Low-sodium soy sauce
- 2 tbsp Rice wine vinegar
- 2 radishes, thinly sliced
- 2 Persian cucumbers, thinly sliced
- 1 medium Carrot, cut into 1/8-inch matchsticks
- 1/4 cup Packed mint leaves
- 1/4 cup Roasted peanuts, chopped
- 2 tsp Black sesame seeds, optional
PREPARATIONS:
- Cook the lo mein noodles according to package directions. Rinse with cold water, drain and set aside.
- Combine the Sun-Bird® Lo Mein Seasoning Mix, orange juice and soy sauce in a small saucepan. Cook, stirring occasionally, until sauce thickens, about 3-5 minutes. Allow to cool completely at room temperature.
- Toss the cooked noodles, low mein sauce, vinegar, radishes, cucumbers and carrots together until coated. Garnish with the mint, peanuts and sesame seeds. Serve and enjoy.
