WHAT YOU NEED:
- 2 Tbsp. Oil, divided
- 1 Large red bell pepper, sliced
- 3 cups White rice, cooked
- 1 pkg. Sun-Bird® Fried Rice Seasoning Mix
- 1 Tbsp. Low sodium soy sauce
- 2 Eggs, beaten
- ½ cup Frozen peas and carrots, thawed and drained
- ½ cup Unsweetened coconut, shredded and toasted
- ½ cup Peanuts, chopped
- 4 Sprigs fresh cilantro, for garnish
- 1 Lime, cut into wedges
PREPARATIONS:
- Heat 1 tablespoon of oil in a large skillet over medium high heat. Cook the peppers until tender, about 5 minutes. Stir in the rice, Sun-Bird® Fried Rice Seasoning Mix and soy sauce, breaking up any large clumps, about 2-3 minutes.
- Push the rice mixture to one side of the skillet and add remaining oil to the opposite side. Add the eggs and scramble, breaking apart, about 2-3 minutes. Stir in peas and carrots with rice and eggs, and mix to combine. Cook rice mixture until heated through, about 2 minutes.
- Top with the toasted coconut, peanuts and cilantro. Serve with lime wedges.
Tip: Add cooked shrimp or chicken to this dish for added protein!
